Learn all about European style cheeses, including French and Spanish, as well as cooking with cheese from Master cheesemakers and chefs

This four-hour classes will cover different cheese types, the basics of making cheese, aged and fresh cheeses, French affinage, and then prepare one or two cheese-related dishes in hands-on classes at the Granada Cooking School.

Your instructors, Vaughn Perret and Charles Leary, were inducted into the French Guilde des fromagers in 1994. For more than a decade they made European style cheese in Louisiana and Nova Scotia. Their creations received critical praise from Food & Wine, the New York Times, and the Food Network, among many others. They have worked with various styles of cheese production and aging, including French style affinage, and with cow, goat, and sheep milk.
